Easter Lunch

Orange-Dijon Pork Loin
Crunchy Onion Potato Bake
Broccoli Casserole
Homemade bread
Lemonade with Strawberries
Chocolate Mousse

Anyone want to join us?

Since I linked to everything but a couple, here are the recipes for those. The bread is just a box mix thrown into the bread machine. And the Broccoli Casserole....
Ingredients:
1 package chopped broccoli, cooked and drained
2 tubes Ritz Crackers, crushed
1 pound Velveeta
1 stick butter

Layer half of the broccoli, half of the cheese (thinly sliced), crackers, and butter (sliced). Then layer with the rest of the broccoli, cheese, crackers and butter. Bake at 350 for 30 minutes.
My mom was the first to make the pork loin. I've made it once, too, and it's delicious. My sister-in-law made the potato bake at Thanksgiving last year (Jon and I enjoyed it at the hospital!). The broccoli is my mother-in-law's recipe, the strawberry lemonade is really Red Robin speckled lemonade, and the mousse is courtesy of Jason's Deli.

My brother-in-law is joining us for lunch, so it's just three so far, if you want to come by!

  1. I wish we lived closer, and we'd drop in on you! But we're going to my parents' house for a combination Easter lunch and lunch celebration for Uncle Chuck's birthday! I'm in charge of potato salad. :)

    I am saving those recipes to try myself (once we get the oven fixed, that is). That pork loin sounds really yummy!

    We enjoyed a great pork loin and speckled lemonaid ourselves, along with peas, salad and garlic parsley new potatoes and yeast rolls! MMMMMM...oh, and yellow cake w/choc. icing!

  5. Well, last minute or not, we managed to have 7 people (+2 babies) over for lunch! It was great! And Tricia, I didn't even think about taking care of Caleb at the same time, but he actually (kindly) slept through the whole thing, and the girls who visited cleaned up at the end while I fed him. So it worked out perfectly!

  6. I remember a couple of fun Easter Dinners we have had with you guys. One time yall invited us over to have your yummy crock pot roast for lunch. Another time it was with Matt Brown and his sister and another girl whose name I can't remember but she was a nutrition major. I wish we could have made this one! :)
